Plant-Based Protein Shake
I like to use this brand of protein powder and protein milk as a snack or meal.  You can add 1 banana, 2 tablespoons of oats or granola, and 1 tablespoon of peanut butter for a meal replacement.  Additionally I add in a dash of cinnamon, vanilla, 1/4 cup of water, and ice.  I also use the chocolate flavor of this protein powder as well.

1 cup of nutmilk and 2 scoops of protein powder yields 31g of protein, 20 g of carbs, and 290 calories, which isn't bad at all.

I purchased this protein powder from Vitamin Shoppe, but I believe Walmart carries as well.  The nutmilk was purchased from Walmart, but it can also be found at Publix and Kroger.

Cucumber-Tomato Salad
This was a cucumber-tomato salad I made with red onion and Kalamata olives.  I chopped the cucumbers and tomatoes up, seasoned with dry Greek seasoning (2 tablespoons) and Greek marinade (1 tablespoon).  

You can also add in a dash of garlic powder, salt, and pepper to taste.  Stir up all ingredients and serve.  Feta cheese can be added as well, but I keep on the side.

                                                                       Buffalo Tofu

I purchased a new air fryer last week and I've been thinking about different recipes to try.  I'm not big on tofu (mostly because of the texture) but cooked this way is something I can deal with.  I found a recipe at this link: https://www.glueandglitter.com/2016/08/12/crispy-air-fried-tofu/
I made some changes to the recipe which are:

  • Added teaspoon of turmeric to the marinade
  • Added 1 tablespoon of red chili flakes to the marinade 
  • Added a dash of sea salt, pepper, and garlic powder to the marinade
  • Tossed the tofu in 1tablespoon of whole wheat flour instead of cornstarch
  • Tossed the air fried tofu in 1/4 cup of hot sauce 
This can be eaten plain or on top of salad, like a buffalo tofu salad (similar to a buffalo chicken salad)

                                                                Vegan Taco Wraps

I absolutely love tacos and this is a guilt free way to enjoy them!  
Recipe:
  • Saute one garlic clove, 2 tablespoons of onion, and 1 shallot in extra virgin olive oil
  • Cook groundless beef crumbles (I used the Gardein brand) for about 7-10 minutes on medium heat (keep an eye on it).  You will need to place about 2 tablespoons of water in pan to make sure it doesn't stick.
  • Stir in one pack of low sodium taco seasoning
  • Pour in one 15oz. can of Rotel diced tomatoes (mild) and simmer for about 5 minutes
  • Use salt and pepper to taste
  • Jalapeños are optional
  • Remove from heat
  • Serve on a lettuce wrap with vegan cheese, salsa and jalapenos
